The quality of PulpJuica®Banana powder hinges on the quality of the bananas used as raw materials. Therefore, raw material control and screening are crucial steps in the production process, directly impacting the nutritional value, flavor, color, and stability of the finished product. Different banana varieties vary significantly in flavor, sugar, starch content, and processing resistance, so the appropriate variety must be selected based on the product's positioning. Richtek typically selects varieties with plump flesh, rich flavor, and high sugar content. For optimal maturity, bananas should be 80-90% ripe (the skin should be a uniform yellow with a few brown spots and no large areas of green).

PulpJuica®Banana powder is widely used in food, health products, feed and other fields due to its natural fruity aroma, rich nutrition (high fiber, potassium, vitamins, etc.) and convenient processing characteristics.

 

In the food processing sector, Banana powder can be used in baked goods recipes to replace a portion of flour (typically 5%-15%), increasing the banana flavor and dietary fiber content while improving the mouthfeel (making the texture fluffier). The addition of Banana powder can reduce the use of refined sugar (leveraging its inherent sweetness), enhancing the nutritional value of the product and aligning with the trend toward healthy baking. Banana powder can be used as a core ingredient in banana-flavored solid beverages or combined with oats, nuts, protein powder, and other ingredients to create convenient, ready-to-drink meal replacements. Its excellent solubility (spray-dried powder is particularly preferred) and stable flavor make it suitable for large-scale production. Banana powder can be used in candies and snacks, providing a natural fruity aroma and sweetness while reducing the need for artificial flavors. PulpJuica®Banana powder retains the main active ingredients of bananas, which possess specific physiological functions and health benefits, and are its core advantage as a natural nutritional ingredient. Natural sugars, primarily fructose, glucose, and a small amount of sucrose, account for 60%-70% of the dry weight of Banana powder, primarily for rapid energy supply and metabolic regulation. These natural sugars are rapidly absorbed by the body, providing energy, and are more gently metabolized than refined sugars. Combined with dietary fiber, they can slow the rise in blood sugar. Dietary fiber contributes to intestinal health and metabolic regulation. Soluble fiber, which accounts for 30%-40% of total fiber, absorbs water and swells, slowing carbohydrate digestion and lowering cholesterol. It is also fermented by probiotics in the intestines, promoting a balanced microbiome. Insoluble fiber promotes intestinal motility, increases stool bulk, prevents constipation, and increases satiety, aiding weight management.

 

Active mineral ingredients include potassium (electrolyte balance and cardiovascular protection), magnesium (nerve and bone health) and a small amount of manganese (antioxidant enzyme cofactor), iron (involved in hemoglobin synthesis), zinc (immune function regulation), etc., which work synergistically to exert physiological effects. Vitamins include Vitamin B6 (nerve and metabolism support), Vitamin C (antioxidant and immune boosting), and Carotenoids (Vitamin A precursors).

 

 

■ Production technology characteristics

The mainstream production processes for PulpJuica®Banana powder are divided into slicing, drying and crushing, and pulping and spray drying. The former retains more aroma and shape, while the latter is conducive to scalability and stable quality. The other drum drying method has a higher yield, but the flavor and color retention is slightly inferior.

 

Slice drying and pulverization (freeze drying/hot air drying) 7-9 days mature, undamaged; peeled manually or mechanically. Color protection is achieved using 0.2% NaHSO3 or sulfur fumigation, or combinations such as sodium ascorbate. Drying methods include hot air drying and freeze drying, followed by low-temperature dehumidification and pulverization. Spray drying is the mainstream process for large-scale production. Color protection can be achieved by adding 0.01%-0.05% sodium ascorbate for 10-20 minutes. The powder is then beaten and homogenized to a solids content of 13%-15%, then subjected to a colloid mill and high-pressure homogenization (10-100 MPa), followed by sterilization. Spray drying is performed with an inlet air temperature of 155-160°C and an outlet air temperature of 80°C, or an inlet air temperature of 200-230°C and an outlet air temperature≤70°C. Moisture content should be≤4%-7%. Maltodextrin (10%-20%) and microcrystalline cellulose (0.03%-0.07%) can be added to the formula to aid dispersion and prevent moisture absorption. The powder temperature should be ≤50°C before rapid packaging.

 

The drum drying method is a high-yield, low-cost process. After beating, the pulp is directly drum-dried into sheets, which are then crushed and sieved. The drum temperature and speed determine the thickness of the sheets and the drying intensity. The flavor and color retention are inferior to spray/freeze drying.
