PulpJuica®Coconut water powder is made from fresh coconut water through a drying process, preserving the many active ingredients found in fresh coconut water. These ingredients give coconut water powder its many beneficial properties. Potassium is one of the most abundant electrolytes in coconut water, with approximately 250 mg per 100 ml of fresh coconut water. Sodium, while less abundant than potassium, is crucial for maintaining osmotic pressure and regulating water metabolism. A moderate sodium intake helps maintain water balance inside and outside cells and prevents dehydration. Magnesium participates in over 300 enzymatic reactions in the body and plays a vital role in energy metabolism, protein synthesis, and neuromuscular function. Calcium is a major component of bones and teeth and is also involved in physiological processes such as nerve conduction and muscle contraction. Although the calcium content in coconut water is relatively low, it is a valuable source of calcium for the human body.
Coconut water contains natural sugars like glucose and fructose, which quickly provide energy. Citric and malic acids give coconut water its refreshing taste. ■ Production technology characteristics
The production process for PulpJuica®Coconut water powder focuses on retaining the nutrients, flavor and active substances of fresh coconut water, and usually includes key links such as raw material pretreatment, sterilization, drying and post-processing.
Fresh coconuts are cleaned and their shells disinfected, then opened aseptically to extract the juice. The juice is initially filtered through an 80-100 mesh filter to remove impurities such as coconut meat debris and fiber, resulting in clear coconut water. If the coconut water contains a small amount of suspended matter, centrifugation can be used for further purification to ensure a uniform, impurity-free liquid.Depending on product requirements, the sugar content, acidity or electrolyte ratio can be adjusted appropriately (such as adding a small amount of natural fruit juice to adjust the flavor, or supplementing minerals to enhance functionality), but the natural properties must be maintained and excessive processing must be avoided.
Coconut water is rich in nutrients such as sugars and vitamins, making it susceptible to microbial growth. Sterilization is essential to control microbial contamination and minimize nutrient loss. Low-temperature pasteurization (60-70°C, 30-60 seconds) is commonly used, suitable for preserving heat-sensitive ingredients. It kills pathogens and most spoilage bacteria, extending the stability of the raw material. Ultra-high pressure pasteurization (HPP), a non-thermal sterilization technology (300-600 MPa, room temperature), maximizes the retention of active ingredients such as vitamins and enzymes. It is suitable for high-end natural coconut water powders, but the equipment costs are relatively high.
Drying is the core step in converting liquid coconut water into powder, directly impacting the product's solubility, flavor, and nutrient retention. Spray drying is the most commonly used method. Sterilized coconut water is atomized into tiny droplets through a high-pressure nozzle. These droplets then come into contact with hot air in a drying tower, instantly evaporating the water and forming powder particles.
This process is highly efficient and suitable for large-scale production, resulting in uniform powder particles and excellent solubility. Adding a small amount of maltodextrin as a carrier can improve the yield and stability of the powder. Freeze drying is a high-end process. The coconut water is first frozen to below -40°C, solidifying it into ice. It is then heated under vacuum (pressure ≤10 Pa) to cause the ice to sublime directly into water vapor, leaving the remaining solids as a loose, porous powder. This low-temperature process (≤0°C throughout) virtually preserves active ingredients such as vitamins, phenolic antioxidants, and enzymes, resulting in a flavor closer to fresh coconut water and excellent solubility. However, this process is energy-intensive, requires a long production cycle, and is expensive.
The dried powder is sieved through a vibrating screen (100-120 mesh) to remove lumps or large particles and ensure uniform particle size. If excipients (such as probiotics and dietary fiber) are added, they must be mixed under a sterile environment to ensure uniform distribution of the ingredients.
