Its main nutrients include vitamins, minerals, dietary fiber, plant compounds, carbohydrates, and natural sugars. Strawberry powder is rich in vitamin C, at levels significantly higher than those found in other fruits. This antioxidant, immune-boosting, and collagen-boosting properties are also present. Strawberry powder also contains a certain amount of vitamin A (or its precursor, beta-carotene), which helps protect vision and maintain skin health. Additionally, strawberry powder contains B vitamins (such as vitamins B1, B2, and niacin), which participate in human metabolism and maintain normal nervous system function. Strawberry powder also contains potassium, which helps regulate electrolyte balance and maintain normal heart function. Strawberry powder also contains minerals such as calcium, magnesium, and iron. ■ Production technology characteristics

The production process of PulpJuica®Strawberry powder usually revolves around the three core links of "raw material pretreatment-dehydration and drying-crushing processing". Common processes include spray drying and freeze drying, and some are also combined with auxiliary steps such as concentration.

 

During the raw material pretreatment stage, fresh strawberries are selected that are highly mature, brightly colored, and free of pests and diseases. After removing the stems and impurities, they are washed with running water or ozone water to eliminate residual pesticides and contaminants. The washed strawberries are crushed and pulped using a pulping machine (if seeds need to be removed, they can be filtered through a screen). This ensures a uniform texture and facilitates subsequent processing. Some processes also include low-temperature pasteurization of the strawberry pulp to kill microorganisms, prolong the raw material's stability, and minimize nutrient loss.

 

The drying and dehydration stage is crucial for fruit powder quality, and the two mainstream technologies differ significantly. The spray drying method first concentrates strawberry pulp through a vacuum process (evaporating some of the water under low-temperature, reduced-pressure conditions, concentrating it to a solids content of approximately 15-30%). The concentrated pulp is then pumped into a spray drying tower, where a high-pressure nozzle atomizes the liquid into tiny droplets. This droplet, exposed to the hot air within the tower, is instantly dehydrated and dried into a powder. The finished product is then separated and collected. This method is highly efficient, suitable for large-scale production, and relatively low in cost. However, the high temperatures may cause the loss of some heat-sensitive nutrients (such as vitamin C).

 

Freeze drying (lyophilization) involves rapidly freezing slices or pureed strawberries at temperatures below -40°C, converting the water into solid ice.

 

Sublimation then converts the ice directly into water vapor (without passing through the liquid phase) under a vacuum. Finally, the dried strawberry pieces are pulverized into a powder. This method uses low temperature (below 0℃) throughout the process, which can maximize the retention of nutrients (especially heat-sensitive substances such as vitamins and anthocyanins) and natural color and flavor, but it has a long production cycle, high energy consumption, and relatively high costs.

 

The dried material is pulverized in a grinder and screened through a sieve (usually 80-120 mesh) to obtain a fine, uniform powder, ensuring solubility and excellent taste. The finished product is then sterilized with ultraviolet light or microwaves before being vacuum-packed or sealed with nitrogen to prevent moisture absorption and oxidation, extending its shelf life.
