In 1935, Dahm announced the discovery of a new vitamin, which he called the "blood clotting vitamin," vitamin K. The best sources of vitamin K are leafy greens, tomatoes, and pork liver. In 1939, Dahm purified fat-soluble vitamin K from alfalfa. Vitamin K isolated from green plants is called K1, while vitamin K produced by the rancid action of the colon is called K2. In 1940, Doisy was the first to synthesize vitamin K and determine its chemical formula. Dahm and Doisy were jointly awarded the Nobel Prize in Physiology or Medicine in 1943.

■ Absorption and metabolism

Dietary intake of vitamin K, mainly vitamin K1, vitamin K2 is mainly synthesized by intestinal flora. Vitamin K is absorbed with lipids in the intestinal lymphatic system, 40-70% of the intake can be absorbed through the bile with fecal excretion, partially eliminated through the urine of anaerobic bacteria in the large intestine can be synthesized vitamin K.

 

 Fermentation vs. Synthetic

There are two main sources of vitamin K2: chemical synthesis method and fermentation method. Fermentation method to produce vitamin K2 is mainly based on natto bacterial fermentation; vitamin K2 (synthetic method) to produce vitamin K, farnesol and geraniol as 3 raw materials, synthesized to produce food fortification vitamins.Vitamin K2 produced by the synthetic method has an all-trans fraction of less than 50%, whereas vitamin K2 produced by the fermentation method has an all-trans fraction of more than 99%.

In contrast, MK-4 is an all-cis structure with a curved molecule, higher energy, and lower bioavailability and biological effects.

Vitamin K2 (MK-7) is mainly found in natto and vitamin K2 (MK-4) is mainly found in meat. Vitamin K2 is mainly produced by fermentation and synthesis. Chemically synthesized vitamin K2 is mainly MK-4, while MK-7 is mainly found in natural ferments. Vitamin K2 (MK-7) is mainly used for osteoporosis, atherosclerosis, Parkinson's disease, and also reduces the risk of cardiovascular and brain disorders. Vitamin K2 (MK-4) is mainly used in osteoporosis. MK-4 has a half-life of one hour in the body, while MK-7 has a half-life of three days.
